Fried Red chilly chutney/Chuttaracha Unakkamulaku Chammanthy



Red chillies make the dishes spicy. When I think about the dried and bright chillies, the tasty roasted chilly - coconut chutney (my Amma's special chuttaracha mulaku chammanthy) will come into my mind. It made a flood in my mouth. So I decided to prepare it for my breakfast. I added some fried shallots/onion pieces to this chutney recipe for more taste. This chilly chutney recipe is matching for rice and rice porridge also. Try it out. 

Make Red Chilly/VattalMulaku Chutney with Roasted Coconut:


Ingredients:

  • Red/dried chillies - 5nos
  • Coconut (roasted pieces) - 6 to 8 nos
  • Fried onions - 5 nos
  • Water - a little
  • Salt - to taste
Method:

Roast the cillies and coconut pieces in a flat pan (you can use the dosa tava). Take care to do not over burn them. Put them into a mixer jar, pour a little water (only for grinding) into the ingredients and add some salt. Grind well. Serve with hot rice porridge/ dosa/ idlies.

Ulli Chutney/Onion-Shallot Chutney Recipe with Coconut



Onion or Shallot (In Malayalam it is 'Ulli') is a good combination for chutney recipe, especially with a little ground coconut. In Kerala there is a popular proverb about the shallot that ' Aaru bhoothathe Konnaval cherulli'. It means that the small onion can kill 6 ghosts. These six ghosts are Diabetics, Dropsy, Heart Diseases, Plague, Cancer and Tuberculosis. You can get an idea about the benefits of onions for a healthy life from this. So try to include onion/Shallot dishes in your meal daily. 

Here I am telling about a quick and simple shallot recipe that is proper side dish for the breakfasts like idly, dosha.... - Onion/Shallot Chutney with coconut. It is very popular in South India. 

Make Easy Onion/Shallot Chutney for Today's Breakfast:


Ingredients:

  • Small Onions- 1 cup
  • Grated Coconut- 4 tbsp
  • Chilly Powder- 1 tbsp
  • Water- 1/2 cup
  • Salt- to taste
  • Red Chilly- 3 nos
  • Mustard seeds- 1/2 tsp
  • Curry Leaves- 2 strings
  • Oil- For seasoning


Preparation:

Cut the shallots into two pieces. Wash them well. Grate the coconut. Put the onions, coconut, chilly powder, salt and some water into a mixer jar. Grind well. Dilute the chutney paste by pouring remaining water. Check the salt to make it proper level. Splutter the mustard, chillies and curry leaves in the oil. Add it into the chutney. Mix well. Serve with idly/ dosha.

Healthy Coconut Chutney Recipes as Your Breakfast/Lunch/Dinner Side Dish



Coconut is a good and healthy ingredient for various curries or side dishes in our breakfast/lunch/dinner table. Coconut is a gift from god for the human being. According Indian culture, coconut is a special or major component in various Poojas. So it is sure that the 'precious' coconut is richly nutritious.

Coconut is a complete food. It is a fruit, vegetable, nut or cereal at same time. Coconut Chammanthy or Coconut Chutney with Dried Chilly:

Method for Preparing this Coconut Chutney:

Chop the ginger. Grate coconut. Fry the red chillies and curry leaves in the oil for 1 minute. Take this mixture into a mixer jar. Add tamarind and enough salt. Grind well and serve with rice pudding, dosa or idly.

You can find ginger and tamarind among the ingredients. You saw the importance and benefits of coconut. There are so many benefits will give by these ginger and tamarind also.

Ginger - The Better Medicine:


Ginger adds so much healthy values to the coconut chutney. Presence of ginger in the coconut chutney dish will avoid digestion problems. It also helps us to withstand tastelessness. It also effective for stomach pain and vomiting. Actually ginger is very beneficial ingredient. 

Benefits of Tamarind:


Tamarind adds nutrient contents to the coconut chutney recipe. It is effective for surviving digestive problems. It is also good for throat.  

How to Prepare Coconut Mango Chutney:


Ingredients:

  • Coconut - 1
  • Red chilly - 10 g
  • Curry leaf - 1 string
  • Mango - 1
  • Ginger - 2 pieces
  • Coconut oil - 50 g
  • Pepper powder - 1/2 teaspoon
  • Salt - to taste


Method:

Chop the ginger, grate the coconut, fry ginger, red chillies, curry leaves and pepper powder in the oil. Add enough salt and cut mango. Grind well.

Coconut Ginger Coriander: chutney:


Ingredients:

  • Ginger - 2 pieces
  • Green chilly - 5
  • Coconut - 1
  • Coriander leaf - to taste
  • Oil - 1 table spoon
  • Mustard - 1 teaspoon
  • Curry leaf - 1 string
  • Salt - to taste
Method of Preparation:

Grind the coconut, ginger, chilly, coriander leaf and salt slitter the mustard seed and curry leaves in oil and pour into the ground chutney.

Benefits of Coriander with Coconut:


Coriander always serves for our health. Coriander leafs' presence in coconut chutney add extra benefit for improving our digestion.

Coconut Pea Nut Chutney - A Special Dish:


Ingredients:
  • Fried pea nuts - 100 g
  • Tamarind - to taste
  • Grated coconut - 1/4 cup
  • Green chilly - 5 nos
  • Big onion - 1 nos
  • Curry leaf - 1 string
  • Salt - to taste

Method of Preparation:

Put the tamarind in some water. Add all other ingredients into it. Grind for 2 minutes.

Coconut Curry Leaf Chutney Recipe:


Ingredients;
  • Curry leaf - 50 nos
  • Grated coconut - 2 cups
  • Tamarind - 1 gooseberry size
  • Red chilly - 8 nos
  • Oil - 1 t.sp
  • Mustard seed - 1 t.sp
  • Salt - to taste

Method:

Fry the curry leaves without oil. Add them into a mixture of coconut, chilly, tamarind and salt. Grind well. Heal oil. Split the mustard and add the chutney into it. Stir well. It is suitable for chappathi, rice etc..

Coconut Lemon Chutney:


Ingredients:
  • Ripe lemon - 1
  • Grated coconut - 2 cups
  • Green chilly - 5 nos
  • Coriander leaf - to taste
  • Oil - 1 t.sp
  • Salt - to taste
  • Mustard seeds - 10 g

Method for Preparing Coconut Lemon Chutney:


Remove the bark and seeds of the lemon, grind it with coconut, chilies, coriander leaf and salt. Heal oil. Split the mustard in it. Add the ground mixture of coconut chutney into it. Mix well.

Coconut Gooseberry Chutney Dish:


Ingredients:

  • Coconut (grated) - 1 cup
  • Gooseberry - 2 nos
  • Chilly powder - 1 t.sp
  • Salt - to taste
  • Water - 1/2 glass
Method:

Grind coconut, gooseberry (chopped) chilly powder, salt and water well and serve with rice porridge, dosa or chapathy. 

Mint/Puthina Coconut Chutney:


Ingredients:
  • Mint leaf - 1/2 cup
  • Coriander leaf - 1/2 cup
  • Green chilly - 3 nos
  • Grated coconut - 1/2 cup
  • Garlic - 10 g
  • Lemon juice - 1 t.sp
  • Salt - to taste
Method:

Grind mint leaves, coriander leaves, green chillies, coconut, garlic and salt with enough water. Add lemon juice into it and mix well.

Coconut Ghee Chilly/Ney Mulaku Chutney:


Ingredients:
  • Grated coconut - 1/2 cup
  • Ghee chilly - 2-3 nos
  • Kadala parippu - 10 g
  • Salt - to taste
  • Water - enough amount
  • Mustard seed - 10 g
  • Oil - 50 g
Method:

Take the entire ingredients in a mixer jar. Grind well. Split mustard in hot oil. Add it into the mixed and ground ghee chilly coconut chutney. After making it loose by pouring enough water.

Water - 2 glasses
Salt - 1-2 pinch

Place the pot on fire
Pour water into it
Add rice to it
Put salt
Mix well
Cook the rice well

Put the entire above ingredients in mixer jar. Grind them well. Serve with hot and healthy rice porridge.
