Actually I am going to describe the way of preparing the Indian- Chinese egg rice dish in Kerala style. It is so tasty even you make it without more vegetables; but only with chopped big onion and scrambled eggs.
You can prepare this egg rice for your dearest through some simple steps. I prepared this recipe for our dinner with remaining cooked rice. For its preparation cook the rice- Ponni rice/ Basmathy rice is more suitable, Separate each grain. Keep aside. Beat two eggs (for 1 cup of rice) and add some salt, chilly powder and pepper powder into it. Mix well. Heat a pan. Pour some oil. Add finely chopped big onion into it. You can add various chopped vegetables also. Take care to don't overcook them. Pour the beaten eggs into it. Scramble well Add the cooked rice into the mixture before the egg content become more drier. Mix well. Serve the hot egg rice.
