Kerala Recipes/Sadya - Avial/Aviyal



Avial is a nutritious Keralite Sadya meal recipe. It is nutritious due to the presence of different vegetables. Merely the avial is a mixture of veggies like carrot, banana, potato, cucumber, bitter guard, drum stick, pumpkin ...together with thick coconut paste and sour curd.

Prepare Tasty Avial for Rice:


Ingredients:
Method:
  • Cut the vegetables into long pieces and clean them well.
  • Grate the coconut and grind 3/4 portion of it with green chillies and cumin into a thick paste. Take care to avoid more water while grinding. Keep the paste aside.
  • The remaining grated coconut should crush well.
  • Cook all vegetables in a pan with salt and turmeric powder. Add a little water which is enough for cooking. Add curry leaves also. Cover it with a lid for 10 minutes. 
  • When they partially cooked, add curd and mix well.
  • After a minute add the thick coconut paste and mix well.
  • Stir the components of avial till they become dry. Add the crushed coconut into it and mix. 
  • Serve the hot avial in your meal.
