Olan is common sadya meal recipe in Kerala. It is simply a side dish made from cucumber together with green chillies in thick coconut milk.
Prepare Cucumber/Kumbalanga/Ilavan Olan for Lunch:
Ingredients:
- Cucumber- 1/2 Kg
- Green chillies- 4 nos
- Coconut milk (First and second)- 1 bowl each
- Salt- to taste
- Water- 1 glass
- Curry leaf- 1 string
- Cut the cucumber into thin pieces.
- Cook them with salt, curry leaves and split green chillies in a small amount of water.
- When cooking completes, add the second (thin) coconut milk. Boil well.
- Add the thick milk. Boil and allow enough drying.
- Serve with hot rice.

Avial is a nutritious Keralite Sadya meal recipe. It is nutritious due to the presence of different vegetables. Merely the avial is a mixture of veggies like carrot, banana, potato, cucumber, bitter guard, drum stick, pumpkin ...together with thick coconut paste and sour curd.
Prepare Tasty Avial for Rice:
Ingredients:
- Cut the vegetables into long pieces and clean them well.
- Grate the coconut and grind 3/4 portion of it with green chillies and cumin into a thick paste. Take care to avoid more water while grinding. Keep the paste aside.
- The remaining grated coconut should crush well.
- Cook all vegetables in a pan with salt and turmeric powder. Add a little water which is enough for cooking. Add curry leaves also. Cover it with a lid for 10 minutes.
- When they partially cooked, add curd and mix well.
- After a minute add the thick coconut paste and mix well.
- Stir the components of avial till they become dry. Add the crushed coconut into it and mix.
- Serve the hot avial in your meal.

- Cook red gram in a pressure cooker.
- Put the onion pieces and turmeric powder with salt.
- Add enough water and cook for 10- 15 minutes.
- Grind the coconut into a paste.
- Mix it with sambar powder and turmeric juice.
- Add this mixture to the boiling curry.
- Splutter mustard, curry leaves and chillies in hot oil and pour it into the curry.
- Serve this hot sambar with rice, dosa, idly or chapati.

Thoran with carrot is an easy side dish for steamed rice. It becomes crispy and tasty with fried coconut. You can try this
stir fried recipe in two ways - with green chilli or by adding red chilli powder. I prepared this recipe with chilli powder that has slight reddish brown colour for today's lunch. Carrots are not only very nutritious but also attract kids for their food. So make carrot dishes for healthy life.
You can also do this fried dish with chopped pieces of carrot or grated carrots. Here I used the chopped form. Carrot mezhukkupuratty/stir fry without coconut, but with fried onion is another recipe for you. It will be soon in another post.

Chop the carrots finely after cleaning them. Grate the coconut. Heat the pan. Pour oil. Add carrots into it. Fry for 2 minutes. Add chilli powder, turmeric powder and salt. Mix with vegetable. Pour sufficient water. Allow to cook well. When the water becomes disappear, add the coconut. Mix again, add curry leaves and serve with hot rice.

mango season comes I would be very happy and try many raw mango/ Pacha manga and ripe mango recipes for my family and friends. Today, I got some sour mangoes and idichakka- idiyanchakka from my neighborhood. Oh, idichakka means the small tender jackfruits. I thought those fruits are best combination for the lunch. I prepared the tasty manga curry with the moovandan manga and soft idichkka with thick coconut paste and red grams.

Method:
- Clean and cut the jackfruit into small pieces.
- Cut the mango into pieces.
- Cook then in a pressure cooker with some water, salt, chilli powder and turmeric powder.
- Grind the coconut with cumin seeds.
- Add it into the cooked content. Mix well. Boil it.
- Splutter the mustard and curry leaves in oil. Put it into the curry.
- Serve for lunch.
